Ingredients

  • 1/4 cup extra virgin olive oil (for skillet method)
  • 2 tablespoons extra virgin olive oil (for coating fish)
  • 1.5 tablespoons Doc Jimmy’s Seasoning (or to taste)
  • 1.5 pounds tilapia, halibut, grouper, or mahi mahi fillets
  • 12 corn or flour tortillas (heated)
  • Unsalted butter can be substituted for extra virgin olive oil
Topping Suggestions
  • 3/4 cup diced tomatoes
  • 1/2 cup diced sweet onion
  • 3/4 cup sweet corn
  • 1/2 cup chopped cilantro
  • 2 cups packaged shredded cabbage or coleslaw mix
  • 3 limes, cut into wedges
  • 8 oz. sour cream
  • 8 oz to 16 oz picante sauce
  • 8 oz freshly shredded white extra sharp cheddar cheese

Instructions

  1. Prepare your toppings: Dice the tomatoes, sweet onion, and chop the cilantro. Set out the shredded cabbage or coleslaw mix, lime wedges, sour cream, picante sauce, and freshly shredded cheddar cheese.
  2. Warm the tortillas: Heat your corn or flour tortillas according to the package instructions, ensuring they’re ready to go once your fish is cooked.
  3. Season the fish: Coat each fish fillet with 2 tablespoons of olive oil. Liberally sprinkle Doc Jimmy’s Seasoning over the fish and gently pat it in to ensure an even coating.
  4. Grill the fish: Preheat an outdoor grill to high heat and lightly oil the grate. Grill the fish for 3 to 4 minutes per side, or until the fish develops a charred, flavorful crust.
  5. Skillet method: If using a skillet, heat 1/4 cup of olive oil or butter over medium heat. Once hot, add the seasoned fish and cook for 2 to 3 minutes per side, until the fish is cooked through with a beautifully charred appearance.
  6. Assemble your tacos: Layer your cooked fish into the warm tortillas, and top with your choice of the prepared toppings. Squeeze a wedge of lime over the top for an extra burst of flavor.
  7. Serve these tacos immediately and let the bold, spicy flavors of Doc Jimmy’s Seasoning transport you to a coastal paradise!
