Ingredients
- 1/4 cup extra virgin olive oil (for skillet method)
- 2 tablespoons extra virgin olive oil (for coating fish)
- 1.5 tablespoons Doc Jimmy’s Seasoning (or to taste)
- 1.5 pounds tilapia, halibut, grouper, or mahi mahi fillets
- 12 corn or flour tortillas (heated)
- Unsalted butter can be substituted for extra virgin olive oil

- 3/4 cup diced tomatoes
- 1/2 cup diced sweet onion
- 3/4 cup sweet corn
- 1/2 cup chopped cilantro
- 2 cups packaged shredded cabbage or coleslaw mix
- 3 limes, cut into wedges
- 8 oz. sour cream
- 8 oz to 16 oz picante sauce
- 8 oz freshly shredded white extra sharp cheddar cheese
Instructions
- Prepare your toppings: Dice the tomatoes, sweet onion, and chop the cilantro. Set out the shredded cabbage or coleslaw mix, lime wedges, sour cream, picante sauce, and freshly shredded cheddar cheese.
- Warm the tortillas: Heat your corn or flour tortillas according to the package instructions, ensuring they’re ready to go once your fish is cooked.
- Season the fish: Coat each fish fillet with 2 tablespoons of olive oil. Liberally sprinkle Doc Jimmy’s Seasoning over the fish and gently pat it in to ensure an even coating.
